Dinner tonight

Enchiladas stuffed with potatoes, kale, spring onions, and pumpkin seeds. Bibb lettuce salad with tangerine dressing. Blueberry cobbler from scratch. Zero added oil, and no animals were harmed... or even insulted... in the making of this feast :)

gosh that sounds good!

of course my dinner was the opposite. a grilled steak and a bowl of spinach. my high iron diet to counteract anemia.

but i make sure and do vegetarian meals as often as possible. tofu sausage and egg whites almost every day for breakfast.

kale is my new favorite vegetable.
